How come when I go on a diet I gain weight?

Whenever I go on a diet, the first few days I gain like 2-3 lbs. but by the end of the week, I'll have lose the weight plus more. Why is this??

your body starts to store food when you first go on a diet, because your changing your eating routine. your body is preparing itself for a food shortage. until it gets use to your new eating habits, it will continue to store food
because it is a sudden change in your eating regime.
your body gets confused and therefore cant balance out the different minerals and vitamins you are eating.
it balances out at the end because it is more settled into the change.
retaining water? or could it be that you are overdoing the diet, so your body initially is trying to hold on to any calories- because it thinks it is starving? or do you switch to all chemical foods, not real ones?
